About the process:
Anaerobic Naturals : When coffee cherries are selectively harvested with a target ripeness of 96%, they are first washed and floaters (under-ripe or defective cherries) are removed. The selected cherries are then transferred to a stainless steel container for 48 hours of anaerobic fermentation. After fermentation, the cherries are moved to raised beds for slow drying.
