About the Process
Anaerobic Naturals: This 60-hour anaerobic fermentation, natural-processed coffee is from the Catuai varietal, grown at 4,450 feet in the block called Godown Patte. The Brix of the coffee cherries was 23.9 when harvested. After floater removal, the cherries were put in stainless-steel fermenters and allowed to ferment for 60 hours. Once removed from the fermenters, the coffee was placed directly on raised beds for slow drying, with constant stirring over the next 30 days.
