About the Process

Yeast Fermented Naturals: The coffee cherries are hand-harvested at optimal maturity after which they undergo fermentation with yeast and then are subjected to optimal drying conditions until an ideal moisture content is attained as the bean dries and develops in its own mucilage and skin. The dried cherries are then further milled and processed to extract the bean from the dried outer skin and pulp.

Flavour Meter

Lot #SN2 was roasted medium, and dropped into the cooling tray at 202°C. It bears a bright Blueberry acidity, a mouthfeel reminiscent umami and a sweetness reminiscent of Red wine . Hence the tasting notes of Blueberry, Umami, shiraz wine.
