ABOUT THE PROCESS
Yeast Fermented Naturals: The coffee cherries are hand-harvested at optimal maturity after which they undergo fermentation with yeast and then are subjected to optimal drying conditions until an ideal moisture content is attained as the bean dries and develops in its own mucilage and skin. The dried cherries are then further milled and processed to extract the bean from the dried outer skin and pulp.
Cupper's Notes
The lot is from Mooleh Manay Estate Lot is Drakshi; a special and unique lot in the sense that it is an Excelsa species instead of Arabica or Robusta. This is a yeast Natural process designed exclusively for Subko, and was treated to a medium roast, dropped into the cooling tray at 202°C. Strong on the acidity, body, and sweetness fronts. It bears tasting notes of Lemongrass, Mangosteen, Roasted Almonds.
About The Origin
Komal Sable, along with Akshay Dasrath, together run Mooleh Maney Estate and the South India Coffee Company, where they produce sustainable and environmentally responsible high quality coffee using traditional farming techniques. Their plantation is located in North Coorg, on the banks of the Harangi backwaters in the foothills of the Western Ghats.
