A 80% dark chocolate bar made with Fine Forastero Cacao that was selectively hand harvested, underwent a 6 day fermentation, and a 6 day drying phase.
The cacao beans were roasted light, hence creating tasting notes of Green Grapes, Dried Fig and Plum Jam.
