About the Process
Carbonic Maceration HSD:
These coffees are picked from the block 8 . Selective picking is done and only ripe cherries are picked, hand sorted and also as well as colour sorted in with help of fruit colour sorter uses high-resolution optical cameras, sensors, and intelligent software to automatically scan and separate produce on a conveyor line based on colour, size, and ripeness cleaned and sanitised then the fruit is pulped and then they are placed in a sealed stainless steel tanks and pressurised with CO₂ to create a fully anaerobic environment for 3 days. This initiates carbonic maceration, a controlled fermentation process in which intracellular fermentation takes place within the intact cherries. The result is a coffee with enhanced aromatic complexity, remarkable clarity, and pronounced fruit-forward character.
Following fermentation, are transferred to raised drying beds, where they are slow-dried over 16 days.
