About the Process

Mosto Fermented Natural:
Mosto fermentation in coffee is inspired by winemaking, where the "mosto" (fermented juice from coffee cherries) is used to enhance the coffee's flavor profile. This technique involves controlled fermentation of the coffee cherries, in their own extracted juice, to develop unique and complex flavor characteristics
The coffee  fruits is placed in double-walled stainless steel tanks with the extracted juice for a period of 48 hr 
 with regular monitoring of fermentation. The fermented coffee is moved to a greenhouse for drying on raised beds to maintain temperatures and is raked hourly to ensure even drying. The coffees are raked thicker for a period of 4 days and then thinner till the desired moisture level is reached

 

About the Roast

Medium Roast:
At Subko, a Medium roast is one that is obtained by dropping the coffee lot at 201°-204°C. These roasts are generally of a sensory profile that is very smooth, caramel and complex tropical fruits. In terms of the Agtron scale, Subko's definition of medium lies between the points 60 to 74, with 74 being the lightest version of a medium roast, and 60 being the darkest version of the roast.
