About the Process:

Culture Washed Process:
This microlot of Sarchimor showcases the producer’s experimental approach to fermentation. After pulping, a frozen mossto culture—crafted from indigenous microbes preserved from the previous harvest—was introduced to initiate controlled aerobic fermentation over 38 hours. The coffee was then mechanically washed and slow-dried for 20 days in a shaded polyhouse, ensuring gradual moisture loss and optimal flavour development. This meticulous process highlights both microbial innovation and environmental control at the Navilu Bande Patte Block.

About the Roast :

Medium Light Roast: At Subko, a medium-light roast is one that is obtained by dropping the coffee lot at 200°-201°C. These roasts are generally of a sensory profile that is bright, vibrant, and fruity. In terms of the Agtron scale, Subko's definition of medium-light lies between the points 75 to 89, with 89 being the lightest version of a medium-light roast, and 75 being the darkest version of the roast.


Cupper's Notes

A medium-light roast expression from Kerehaklu Estate, this cultured washed lot opens with a gentle maple syrup sweetness, leading into a bright and juicy apricot note at its core. The cup is rounded by a soft nuttiness reminiscent of candied pecans, adding depth and warmth to the profile. The structured acidity and clean finish highlight the precision of processing, while the silky texture allows the sweetness and fruit character to linger with elegance.

About Kerehaklu Estate

Kerehaklu Estate is a sustainable, biodiversity-friendly farm in Chikmagalur, Karnataka, India. Specialty coffee is grown alongside several varieties of pepper, avocados, citrus and mulberries - all in harmony with the local flora and fauna. 

Kerehaklu has been run by the Thipaiah family since 1953 and is now overseen by Pranoy Thipaiah, who is the fifth generation to do so. The farm has gone chemical-free in late 2016 and are thus experiencing a gradual influx of birds and small mammals from the neighbouring Bhadra State forest.
