About the Process

Submarine Washed: This is a unique processing method, whereafter selective picking, the coffee fruits are washed, then kept under a flow of water (a water channel, like a waterfall) for 36 hours. The fruits are then kept for fermentation in an anaerobic condition, then dried on raised beds.

About the Roast

Medium Roast: At Subko, a Medium roast is one that is obtained by dropping the coffee lot at 201°-204°C. These roasts are generally of a sensory profile that is very smooth, caramel and complex tropical fruits. In terms of the Agtron scale, Subko's definition of medium lies between the points 60 to 74, with 74 being the lightest version of a medium roast, and 60 being the darkest version of the roast.

About the Farmer

Introducing our new community of farmers from Gandha Village, Andhra Pradesh. Each farmer individually contributes to growing, harvesting, and nurturing each microlot of coffee.
Situated in the heart of Araku Valley, Gandha Village is named after the scent of the earth. The tribals chose this hill for the natural spring found at the summit which contributes to the rich soil found across the estate.
The coffee grown here is nurtured by the Kondh and Bagata tribes, using traditional techniques passed down across generations.
Our farmers plant seeds from Nov-Jan. Post harvest season, they harvest and dry the cherries that are then processed at Subko Craftery, BOM, for the finest Specialty cup.
