Omni roasting embraces the idea that any coffee can be brewed using any method.

About the process:

Anaerobic Yeast Naturals : When coffee cherries are selectively harvested with a target ripeness of 99%, they are first washed, and floaters (defective or under-ripe cherries) are removed. The selected cherries are then placed in a stainless steel container along with a specific yeast strain for 168 hours of fermentation. After this, the cherries are transferred to raised beds for slow drying.
