About the Process
Carbonic Macerated : This coffee lot is meticulously processed beginning with hand-picking, where only fully ripe cherries — deep red or purplish depending on variety — are selectively harvested to ensure optimal sugar levels for precise fermentation and flavor clarity. Immediately after harvest, the cherries undergo water flotation sorting, where dense, ripe cherries are separated from underripe or defective floaters, guaranteeing high-quality inputs. The sorted cherries then undergo 60 hours of carbonic maceration fermentation in sealed tanks, inoculated with a custom culture to maintain control
and consistency, enhancing complexity and clarity in the cup. Post-fermentation, the cherries are dried on raised beds inside a polyhouse, with regular raking to promote even drying over 7–10 days while minimizing microbial risks. To protect quality, the cherries are covered each evening to prevent moisture reabsorption from dew, ensuring a steady drying curve. Throughout this process, moisture content is carefully monitored, and once it reaches the stable range of 11–12%, the coffee is ready for safe storage, preserving the delicate flavors and aromas.
About the Roast
Medium Roast: At Subko, a Medium roast is one that is obtained by dropping the coffee lot at 201°-204°C. These roasts are generally of a sensory profile that is very smooth, caramel and complex tropical fruits. In terms of the Agtron scale, Subko's definition of medium lies between the points 60 to 74, with 74 being the lightest version of a medium roast, and 60 being the darkest version of the roast.
