About the Process

Carbonic Washed: The Carbonic Washed process is a 'cutting-edge' coffee processing technique that utilizes carbon dioxide (CO2) during fermentation. Coffee cherries are pulped, then placed in a sealed tank with CO2, creating an oxygen-free environment akin to anaerobic fermentation. This fosters the development of distinct flavor compounds. After controlled fermentation, beans are washed and dried, resulting in a coffee with vibrant acidity, fruity notes, and a clean finish. The method demands meticulous monitoring for the desired flavor profile, but yields highly coveted coffees cherished by specialty enthusiasts.
