About the Process
Naturals:
Ripe cherries are handpicked, with defects removed, and a sample lot is taken to measure Brix (27). Floaters and foreign material are removed, followed by de-stoning and double washing, before the cherries are placed in double-walled stainless steel tanks and anaerobically fermented for 96 hours with regular monitoring. Post-fermentation, the coffee is dried on raised beds in a greenhouse and raked hourly to maintain temperature and ensure even drying.
